Salumist: a Maker of Excellent Sausage, Salami, and Other Meats

There’s something special about the Driftless Region of Wisconsin, with its unique topography, small family farms, and a culture of sustainable and healthy living.

In 2017, Ryan Wagner, along with Justin VerMeer and Spencer Schaller, set out to make artisanal sausage in Viroqua. What started in their root cellar has grown, and Driftless Provisions can now be found in markets throughout the continental United States, including at Basics!

 

Soppressata is a Roman style salami made with humanely-raised, heritage pork, white wine & red pepper. No added nitrates.

Pair with a young Gouda cheese, light & crisp beer, or Pinot Grigio.

 

Finnochiona is a fennel-flavored salami with roots in Tuscany, Italy. Made with humanely-raised, heritage pork, red wine, fennel, & garlic. No added nitrates.

Pair with an aged provolone, semi-dry cider or your favorite Italian wine.
