Co+op Recipe

Signature Steak Salad

Recipe contributed by Sarah Hotchkiss from the Basics Board and Catalyst Wellness Coaching.

 

Ingredients (3-4 servings):

1 lb. Beef loin steak, lean (trimmed of excess fat, halved crosswise)

2 tsp. Extra virgin olive oil

2 cups Cherry tomatoes, halved

8 oz. Arugula

1/2 cup Roasted red peppers

8 Tbsp. Balsamic vinegar

1 Avocado slice per serving

 

Instructions:

Prepare a grill for direct-heat cooking over hot charcoal or high heat for gas. Oil the grill rack, then grill the steak, covered only if using a gas grill, turning once, 4 to 6 minutes total for medium-rare. Transfer steak to a cutting board and let rest, loosely covered with foil, for 5 minutes. Then thinly slice the steak, on the diagonal, across the grain. Arrange on top of the arugula, and toss the other vegetables on top. Combine the remaining olive oil and vinegar, drizzle on top, and serve.
